Making it in Michelin’s Bib Gourmand restaurant list for 3 straight years, and offering a kind of ramen I haven’t had – that’s enough reason for me to go to Mugi to Olive.
For starters, a vocabulary recap:
Mugi = wheat
to = and
Olive = … Olive

Located at Ginza, thick wheat noodles provide carbohydrates of their main dish. Here, olive oil is used as a condiment to the soup, similar to how one adds chili powder or crushed garlic.
Dinner peak hours, I knew what to expect – a line. I was kinda hoping there would be none because I was really hungry. Good thing we only queued for less than an hour.

This ramen shop had bar type seats. Light brown wood finishing and warm lighting gave a homey feel to it. The wall behind us had hooks where you can hang your bags and jackets. It’s a bit narrow compared to a Western restaurant setting. But this isn’t the first time we saw this setup in Tokyo (see Nakaya for sashimi donburi, and Nakiryu for ramen).
Something we already know, the ramen machine is back. Same steps, press the button of your order and meal tickets get dispensed after you pay.
Tokusei Hamaguri Soba – Asian Hard Clam in Soya Sauce broth
Although shoyu isn’t exactly my favourite ramen base, the clam broth made the difference. This bowl had that depth of shellfish flavor and a generous variety of toppings.
Tokusei Triple Soba – combination of Chicken, Clam, and Sardine broth in Soya Sauce broth
Similar to my order, but with a kick. Sardine made the ramen stronger in flavor on top of the clam and chicken broth. The toppings were the same

Maybe we were extra tired so we both ordered the variants with extra toppings (Tokusei). Extra whole egg, nori, chicken meat, and leaves (forgot it was) were served on a separate plate/mini bowl so you can put them in your ramen anytime you’d like.
I’m more used to the regular straight ramen noodles rather than the thicker noodles in this bowl. But the noodles and the extra toppings sure can fill you up for another day of touring. For our case, this was our last restaurant meal in Tokyo.
